Abstract

The Westin Resort Nusa Dua Bali merupakan salah satu hotel bintang 5 yang berada di kawasan Nusa Dua. Pemilihan judul Tugas Akhir yaitu Pembuatan Canape (High Tea Menu Set) oleh Chef De Partie pada Gardemanger di The Westin Resort Nusa Dua Bali. Pembuatan Canape (High Tea Menu Set) memiliki 3 tahapan, tahap persiapan, tahap pembuatan dan tahap penyajian. Dan terdapat beberapa hambatan yaitu oven yang digunakan tidak memiliki timer dan suhu cool room yang tidak sesuai.
