Abstract

Currently, environmental damage is a problem that requires greater attention from all parties. The numerous human activities have led to various adverse impacts on the environment. Jackfruit Restaurant has implemented environmentally conscious actions and produces minimal waste with the concept of green food, involving all food and beverage staff to increase environmental awareness. The environmental damage prevention efforts by Jackfruit Restaurant include waste management, electricity conservation, and the utilization of local food ingredients. Green food has been implemented in Jackfruit Restaurant by Pramana Girikusuma, and research has been conducted to understand the relationship between the restaurant's green food implementation and the concepts of reduce, reuse, recycle in enhancing environmental awareness. Through data tabulation from questionnaires filled by 7 individuals and interviews conducted with 3 kitchen staff, 3 waiters/waitresses, and the resort manager, Pramana Girikusuma, it was found that Jackfruit Restaurant has implemented 3 out of 4 green food indicators, with only one indicator, the use of organic food ingredients, yet to be fully implemented. The average score for the 4 green food indicators was 4.10, categorized as well-implemented. The highest average score was 5, indicating a well-implemented status. The tabulated data also revealed that the relationship between green food implementation and environmental awareness enhancement in Jackfruit Restaurant by Pramana Girikusuma obtained an average score of 3.42, categorized as high. This demonstrates that the green food implementation at Jackfruit Restaurant by Pramana Girikusuma effectively enhances environmental awareness.
