Abstract
This research discusses the analysis of research and development to innovative banana fritter menu engineering at Mayasari Restaurant in Maya Ubud Resorts & Spa. the purpose of this research is to determine the process and influence of research and development to innovative banana fritter menu engineering and to find out the relevance of research and development process to menu engineering activity at Mayasari Restaurant in Maya Ubud Resorts & Spa. The data collections methods was used observation and interview as primary data and documentation and bibliography as secondary data. Data analysis was carried out using qualitative descriptive analysis of primary and secondary data. The result of this research indicate that application of research and development with ADDIE model (analysis, design, development, implementation, evaluation) to create new menus such as innovative banana fritter to modern style in Maya Ubud Resorts & Spa is closely related with menu engineering as evaluating menu methods, this is explained in the implementation process such as food costs and determining selling prices as well as evaluating sales data in the system which is the basis for menu engineering analysis. The analysis of research and development to innovative banana fritter menu engineering at Mayasari Restaurant was concluded using the menu engineering matrix diagram from the sales period of july 2024 to march 2025 which is in the “Star” category with the calculation of the mix menu and contribution margin value at each average standard value with “High” status. In the future, menu analysis using menu engineering can be optimized as a strategy for making decisions.
