Abstract

This research aimed to analyze menu engineering as an effort to increase cocktail sales at Sundara Bar. The study was conducted at Sundara Bar, Four Seasons Resort Bali at Jimbaran Bay. The object of this research was the cocktail sales at Sundara Bar, Four Seasons Resort Bali at Jimbaran Bay. The focus of this research was the implementation of menu engineering analysis as a strategy to improve cocktail sales at Sundara Bar. This study used data analysis methods, including menu engineering analysis and descriptive analysis techniques. The results of this research showed that: (1) there were 7 cocktail menu items that were neither popular nor profitable (Dogs); (2) there were 4 cocktail menu items that were popular but had low profitability (Plowhorses); (3) there were 5 cocktail menu items that were profitable but not popular (Puzzles); and (4) there were 4 cocktail menu items that were both popular and profitable (Stars).
