Abstract

The evolving hospitality and restaurant industry demands innovation that focuses not only on food quality but also on the overall guest experience. Sawah Terrace Restaurant at Mandapa, a Ritz-Carlton Reserve, presents a culinary concept aligned with the Disconnect to Reconnect philosophy, inviting guests to momentarily disconnect from digital distractions and reconnect with nature, culture, and themselves. This study aims to analyze the implementation of this concept in food and beverage service, while identifying barriers and solutions. The research method was conducted through observation and in-depth interviews of the service process, which is divided into three stages: preparation, implementation, and final stages. The results show that Sawah Terrace has implemented the Disconnect to Reconnect concept through the use of local organic ingredients, traditional cooking techniques, and serving with environmentally friendly equipment. Barriers encountered included technical system disruptions, inaccurate kitchen communication, and guest requests outside the menu. These challenges were successfully overcome with effective solutions such as manual captain orders, communication via walkie-talkies, and a pre-order system.
